How To Make Them

Dice bell peppers, onion, and salt to taste. Bake at 400 in the oven for 40 minutes, taking it out to mix 3 times throughout the 40-minute bake time. Set aside the roasted veggies for later.

In a bowl, mix chicken with lime juice, cilantro, avocado oil, honey, garlic powder, chili powder, paprika, cumin, salt, pepper, and water. Marinate for at least 30 minutes.Â

Toss in the air fryer and cook at 385°F for 9 minutes. Dice into small pieces and add to a bowl along with the roasted fajita veggies.

Stir Greek yogurt, chipotle hot sauce, and mozzarella into your chicken and fajita veggies. Mix thoroughly.

Warm your burrito tortillas. Layer refried beans, and your creamy chicken fajita mix (about 170g per burrito). Roll tight.
Storing And Reheating Tips
Wrap each burrito in foil or parchment. Freeze or store in the fridge.
To reheat, one burrito at a time:

Microwave wrapped in a paper towel for 1 minute and15 seconds.

Air fry at 360°F for 6–7 minutes to crisp up the tortilla and warm the middle.

If reheating multiple items, adjust the time in the microwave and air fryer until fully cooked through.
