This slow-cooked Garlic Butter Chicken Alfredo is the kind of meal that makes you feel like you’ve got your life together without needing six hours and a culinary degree to pull it off.

It’s creamy, crave-worthy, and built for the kind of person who wants dinner to feel like a win, not a second job.

This one comes straight from the Stealth Health Slow Cooker Cookbook, and it has become a fridge staple for a lot of people who want better but still want food that tastes like, well, food.

Why This Recipe Works

Chicken Alfredo usually comes with a tradeoff. It’s comforting, sure, but it often leaves you dragging by 8 p.m. and wondering why it had to be that heavy.

This version keeps all the good stuff: rich garlic, real Parmigiano Reggiano, and creamy sauce. Plus, it skips the crash. The macros are tuned to support real energy. The flavor still comes first.

You get 10 full meals from one batch. Each portion holds up great in the freezer, tastes just as good reheated, and keeps you feeling clear, not sluggish.

Macros, Simplified

This one has balance built in, and makes 10 servings:

  • 510 calories per serving

  • 47g protein

  • 54g carbs

  • 14g fat

It’s rich enough to keep you full, with enough protein to support training days, desk days, or anything in between. You do not need to count every gram to know this meal shows up for you.

Ingredients You’ll Need

For The Chicken

  • 32oz chicken breast

  • 30g Parmigiano Reggiano

  • Juice of 1 lemon

  • 2 tbsp garlic purée (or minced garlic)

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 1 tbsp salt

  • 1 tsp black pepper

  • 2 tsp roasted garlic brown butter seasoning (optional)

  • Dash of crushed red pepper

  • ½ cup water

  • 30g butter

For The Pasta

  • 672g pasta of your choice (cook it halfway)

For The Alfredo Sauce

  • 800g 2% blended cottage cheese

  • 120g 1/3 fat cream cheese

  • 120g Parmigiano Reggiano

  • 240ml milk

  • Salt and pepper to taste

The secret sauce here really is the sauce. Blending cottage cheese with parmesan and cream cheese gives you that creamy texture without the usual heaviness.

How To Make It

You can follow along with the full recipe video for more details, but here’s the overview:

  1. Add all your chicken ingredients to the slow cooker and stir everything together.

  2. Cook on high for 3 to 4 hours or low for 5 to 6 hours,, until the chicken is fork tender.

  3. Cook your pasta to 50 percent done just until it starts to soften.

  4. Blend the Alfredo sauce ingredients until smooth.

  5. Shred the chicken directly in the slow cooker, then stir in the pasta and sauce.

  6. Let it finish cooking together in the slow cooker for 10 to 15 minutes until the pasta is cooked through and the sauce is creamy.

That’s it. A high-protein, slow-cooker chicken Alfredo sauce, and recipe that does not slow you down and still brings all the comfort.

Reheating and Freezing Tips

This recipe is made for meal prep. Portion it into 10 equal servings, enjoy, and freeze your leftovers.

To reheat:

  • Microwave for about 4 minutes

  • Add 2 to 3 tablespoons of milk if the sauce thickens during storage

The flavor holds up. The texture stays creamy, giving you the perfect chicken alfredo prep meal.
