Ingredients You’ll Need

For The Filling

  • 6 chicken sausages (Target brand works well)

  • 6 slices center-cut bacon

  • 1 Tbsp honey

  • 1 Tbsp cornstarch (to help eggs stay creamy when reheated)

  • 360g egg whites

  • 90g low fat cheddar

  • Salt and pepper to taste

For The Wrap

To Finish

  • Spoonful of fat-free Greek yogurt

  • Hot sauce of choice

How To Make Them

  1. Chop your bacon into bits and cook over high heat until crispy. Remove from pan, and place on a paper towel on the side and wipe down excess grease.

  2. Remove casing for chicken sausage (if it has it), then dice into small pieces. Toss and cook in the same pan as your bacon, adding honey for sweetness.. Cook until browned and set aside.

  3. In a large microwave-safe bowl, whisk some of your egg whites and cornstarch to make a slurry. Add the rest of your egg whites along with salt, pepper, garlic powder, and low fat cheddar cheese.

  4. Microwave in 45-second intervals, scraping edges and stirring between each round. Stop when eggs are firm — they’ll finish with residual heat.

  5. Fill each tortilla with Greek yogurt, chicken sausage, eggs, bacon, and your hot sauce of choice.  Roll tightly and wrap.

Freezing And Reheating Tips

  • Freeze each burrito individually in foil or parchment

  • To reheat each burrito, microwave for 1 minute on each side. Heat over a hot pan for 3-5 minutes on each side until golden and crispy. This reheats the interior fully and locks in moisture. Alternatively, air fry for 6-8 minutes at 375°F.

Thanks to the cornstarch, the filling stays creamy.
