Straightforward comfort in one roll. 

Ingredients You’ll Need

Taco Beef

  • 1 pound 93% lean ground beef

  • 1 packet taco seasoning

Cheesy Taco Mix

  • 200g 2% Greek yogurt

  • 100g red enchilada sauce

  • 2 Laughing Cow cheese wedges

  • 2 Tbsp chopped cilantro

  • 60g 2% shredded cheddar

Tortillas

  • 6 burrito tortillas

How To Make It

  1. Brown the beef over medium-high heat until fully cooked. Add taco seasoning and a splash of water.

  2. Once cooked, transfer the beef to a bowl. Stir in Greek yogurt, enchilada sauce, Laughing Cow cheese wedges, reduced-fat cheddar, and chopped cilantro. Mix until creamy.

  3. Divide the mix into six burrito-sized tortillas. Roll tight. Enjoy now or wrap and freeze for later!

 

Storing And Reheating Tips

Freeze burritos individually in foil or parchment paper.
To reheat:

  • Just microwave these for 2-3 minutes, one burrito at a time 

  • For a crispy exterior, microwave for ~1-1.5 minutes to defrost, then air fry or pan fry until crispy
