Meat

  • 1360g (48oz) 93% ground beef
  • 8 slices center-cut bacon

Beef Marinade

  • 794g (28oz) diced tomatoes
  • 60g (4 Tbsp) sweet relish
  • 45g (3 Tbsp) tomato paste
  • 30g (2 Tbsp) garlic purĂ©e
  • 30g (2 Tbsp) diced chipotles
  • 25g (5 tsp) coarse salt
  • 15g (1 Tbsp) onion powder
  • 15g (1 Tbsp) garlic powder
  • 15g (1 Tbsp) black pepper
  • 15g (1 Tbsp) oregano
  • 10g (2 tsp) cumin

Blended Cheese Sauce

  • 800g (3â…“ cups) 2% cottage cheese
  • 150g (1½ cups) extra-sharp cheddar, grated
  • 125g (5 slices) American cheese
  • 250ml (1 cup) 1% milk
  • To taste: salt & pepper

Caramelized Onions

  • 3 yellow onions, diced
  • 480g (2 cups) beef bone broth
  • Dash of soy sauce

Pasta

  • 672g (24oz) pasta of choice, cooked to 50%

Garnish

  • Chopped chives

How To Make It

Instructions: Follow along with the video here.

  • Mix diced tomatoes, sweet relish, tomato paste, garlic purĂ©e, diced chipotles, coarse salt, onion powder, garlic powder, black pepper, oregano, and cumin in a bowl to make the marinade.
  • Add 93% ground beef to the slow cooker, pour in half the marinade, and line the sides with the bacon pieces. Cover and cook on High for 2–3 hours or on Low for 3–4 hours until tender.
  • While the beef cooks, add diced onions to a skillet over medium-high heat and cook until the water cooks off and they begin to brown and stick. Pour in beef bone broth with a dash of soy sauce, boil, and reduce completely until the onions are jammy.
  • Blend the cheese sauce: 2% cottage cheese, grated extra-sharp cheddar, American cheese, and milk until smooth. Season with salt and pepper.
  • Stir the remaining marinade into the slow cooker. Add the pasta cooked to 50% and the bone-broth caramelized onions. Pour in the blended cheese sauce and stir to coat.
  • Cover and cook on High for 20–25 minutes until the sauce thickens and the pasta is tender.
  • Finish with chopped chives. Portion into 13 containers and let cool before storing.

Storing And Reheating Tips

Store frozen. To reheat a serving: microwave about 5 minutes, stirring halfway. Add a splash of milk if you prefer it looser.
